Question: How do I input current inventory and quantities without making a purchase order?

You should create the initial receiving. Click on the button "Vendor" and create a new vendor with any name, for example "My company". Then click on the button "Receive" and create a new receiving list with the vendor "My company" and add all your products with current quantities. Click on the button "Save" and open the List of Products. You'll see the current quantities in the column "On Hand".
