Question: We need to know if it is possible to create a field "Category" so that we can put products into categories, instead of a flat product list.

You can use field "Group". Open product edit form and enter "category 1" in the field "Group". Open next product and select group from drop down list of the field "Group". Then you can use filter on the Products List form. Click on the button "Filter" and set "Group" = "category 1"
